Web7 Jan 2024 · Normally I'd wrap it 3-4hours in but that will probably be the middle of the night so thinking just put it on late tonight, 10pm-11pm at 107 then check it in the morning and wrap it if needed and turn up to 135 to finish off. Also going to do some pork ribs for the last 3-4 hours which I normally do at 135c as well. Tips/Advice welcome Thanks!
